BOCA Classic Chili

2red peppers, cut into 1-inch pieces
1can(15 oz.)black beans, drained
1can(15 oz.) chilibeans in sauce
1can(15 oz.)tomato sauce
1can(14-1/2 oz.)diced tomatoes, undrained
1pkg. (12 oz.) frozenBOCA Veggie Ground Crumbles
1can(4 oz.) choppedgreen chiles, drained
Cook and stir peppers, onions and garlic in oil in large saucepan on medium-high heat 3 min.
Add remaining ingredients; mix well. Bring to boil; simmer on medium-low heat 30 min., stirring occasionally.
BOCA KITCHEN TIPS
Serve topped with chopped fresh tomatoes, green onions, shredded reduced-fat cheese, light sour cream, hot pepper sauce and/or other favorite chili toppings.
Add 1 cup frozen corn along with the beans.
For spicier flavor, substitute 1/4 cup chopped chipotle peppers in adobo sauce for the canned green chiles.
Enjoy this robust low-calorie low-fat meatless meal! As a bonus, the red peppers provide a good source of both vitamins A and C.
